Reinspection of 3rd Floor Kitchen found some violations corrected but temperature control issues persist. Milk measured at 44°F in room service cooler and sliced tomatoes at 46°F on prep cooler, both above the 41°F requirement. During inspection, salmon and cut tomatoes were found at 45°F and had to be relocated.

Why This Matters
Temperature abuse causes 63% of foodborne outbreaks. Clostridium perfringens multiplies rapidly between 70-120°F. Listeria grows even at refrigeration temperatures.
What Was Observed
Measured milk at 44F inside the 4-door Traulsen cooler in the Room Service area. The operator turned down the cooler temperature to bring the milk into compliance. Measured sliced tomatoes at 46F on the top portion of the cold prep cooler. The operator moved the sliced tomatoes to the walk-in cooler to bring them into compliance.
