Inspector's Report

During a routine inspection of the 4th Floor Cafeteria, inspectors found multiple temperature violations including Cornish game hens held at 120°F and pasta at 129°F in a warmer, both below the required 135°F minimum. Additionally, cut tomatoes and sealed yogurt were found on a cold table at 45°F and 56°F respectively, exceeding safe cold holding temperatures.

Temperature abuse causes 63% of foodborne outbreaks. Clostridium perfringens multiplies rapidly between 70-120°F. Listeria grows even at refrigeration temperatures.
Measured Cornish game hens at 120F and pasta at 129F inside the Crescor over/under warmer. These foods had been there for one hour and were reheated to 165F. Measured cut tomato at 45F and sealed, pasteurized yogurt at 56F (IR reading) on the cold table. The tomatoes had been there for less than one hour and were moved. The yogurt had been there for closer to 4 hours, but was moved due to it being sealed, pasteurized dairy with an internal temperature likely several degrees lower.
