Temple SF Night Club's currently unused kitchen was cited for multiple operational deficiencies during routine inspection. Inspector found no paper towels at handwash sink, hot water temperature below required 120°F at only 102°F, missing chlorine test strips for dishwasher sanitization monitoring, and damaged ventilation hood requiring repair. All corrections must be completed before kitchen can resume operations.

What Was Observed
Obtain chlorine test strips for low-temp mechanical dishwasher. Continue to ensure that mechanical dishwasher dispenses 50ppm chlorine sanitizing solution. Ensure that sanitizing solution in buckets used for wiping cloths measures 100ppm chlorine.
