Maintain all potentially hazardous food items at a hot holding temperature of 135 degrees Fahrenheit or above. - Observed chicken rollers in hot case ready for service at 124.5 degrees Fahrenheit for less than two hours. Corrected on site: Operator increased heat on equipment, achieving above 135 degrees Fahrenheit at the time of inspection. Internal temperature at recheck was 149 degrees Fahrenheit.
