Food Contact Surfaces: Clean and Sanitized
Dirty cutting boards and utensils cause 76% of cross-contamination. Biofilms protect bacteria from cleaning. One contaminated surface spreads pathogens to dozens of foods.
Observed no sanitizing solution was readily available in the active food preparation area. Corrected on site - Sanitizing bucket was filled with solution (200 ppm quaternary ammonia).

Plumbing; Proper Backflow Devices

Observed piping for the three compartment sink is directly in the floor sink. PROVIDE a minimum one inch air gap for all piping to floor sink to prevent backflow.
#7
CORRECTED MAJOR
Proper Hot and Cold Holding Temperatures
Temperature abuse causes 63% of foodborne outbreaks. Clostridium perfringens multiplies rapidly between 70-120°F. Listeria grows even at refrigeration temperatures.
Observed milk at 45F-47F in the under the counter refrigeration unit behind the counter. Per employee, milk had been in the unit for less than 4 hours. Corrected on site - All food items including meat taquitos were relocated to the walk-in refrigeration unit. IMMEDIATELY discontinue using the refrigerator until verified to be holding at 41F or below.
