What Was Observed
DISCONTINUE storing raw shell eggs and other PHFs at room temperature. Upon delivery, IMMEDIATELY place PHFs into refrigeration for cold holding. KEEP a receiving temperature log. - Observed 3 cases of raw shell eggs with internal temperatures ranging from 49-63F and surface temperatures of 58-61F sitting in the dry storage closet at room temperature.
