CRITICAL
Premises; Personal/Cleaning Items; Vermin Proofing
Why This Matters
Clutter provides harborage for rodents and cockroaches. Cardboard harbors cockroach eggs. Each egg case contains 30-40 nymphs.
What Was Observed
seal large hole in wall around the corner from water heater. check all walls here for holes. seal with metal flashing or 1/4 in steel wire mesh. you can also use tile or dry wall for larger holes. check for all pipes going into walls as conduit gaps around pipes usually allow for vermin entry too. a specific example would be the pipe going into wall behind toilet in restroom. seal this gap by stuffing steel wool into large gap and then using a pipe collar to seal off hole properly. check all walls in restroom and area in front of restroom where fridges/freezers/hole in wall is.

Food Contact Surfaces: Clean and Sanitized
Why This Matters
Dirty cutting boards and utensils cause 76% of cross-contamination. Biofilms protect bacteria from cleaning. One contaminated surface spreads pathogens to dozens of foods.
What Was Observed
ensure bleach and water is being used for sanitizer on food contact surfaces during service. 100ppm bleach is 1 tablespoon of bleach per gallon of water. the red buckets hold about half a gallon so use half a cap of bleach in them to mix.

What Was Observed
deep clean all floors to remove food debris, grease, oil, garbage from floors and equipment to eliminate food source for rodents. remove all items unrelated to store. keep all items off floor to be able to monitor for vermin activity.
