Inspector's Report

Routine inspection revealed vermin infestation with one live cockroach found in bar area and dead cockroaches on adhesive boards. Walk-in cooler malfunctioning at 49°F caused food disposal, bar refrigerator unplugged with dairy at unsafe 59°F. Additional violations included missing food safety certificates, inadequate handwashing supplies, and non-functioning dishwasher sanitizer.

Mice produce 50 droppings daily containing Salmonella and hantavirus. Cockroaches carry 33 bacteria types and 6 parasitic worms. Rats spread plague and leptospirosis.
Observed 1 live cockroach in bar (front side between boards in wood). Observed dead cockroaches on adhesive boards in kithcen and bar. Have immediate pest control (discuss feasibility of fumigation) with pest control operator. Reinspection will occur to verify facility is free from vermin. Send pest control report to district inspector.

Ware wash machine in bar not producing adequate sanitizer, please sanitize dishes in 3 basin sink. Olease have machine serviced by licensed technician.

Temperature abuse causes 63% of foodborne outbreaks. Clostridium perfringens multiplies rapidly between 70-120°F. Listeria grows even at refrigeration temperatures.
Walk in holding at 49F, PHF was sausage which were discarded at time of inspection. Lower glass refrigerator in bar was unplugged, milk, crème were 59F and voluntarily discarded. Please have walk in serviced, do not store potentially hazardous food until riefreratior is hold at or below 41f. Send proof of repair to district inspector.
