PROPER HOT AND COLD HOLDING TEMPERATURES
Temperature abuse causes 63% of foodborne outbreaks. Clostridium perfringens multiplies rapidly between 70-120°F. Listeria grows even at refrigeration temperatures.
DELI DEPARTMENT: 1. Discontinue holding foods in the temperature danger zone (between 41°F-135°F), as observed in the walk-in cooler located in the back, nearest the high-temperature dishwasher. At the time of inspection, the following temperatures were measured: meat sauce at 49°F, cooked vegetables at 46°F, cooked potatoes at 48°F, and raw meats at 45°F. Contact your refrigeration technician to perform a full maintenance service on this unit, including inspection and cleaning of the evaporator coils to ensure proper air circulation. Inform the technician that the ambient temperature for this unit (and all other refrigeration unit) must be maintained at a maximum of 36°F.

BAKERY DEPARTMENT: 1. Ensure that all utensils and wares are properly sanitized using a solution containing 200 ppm quaternary ammonium. At the time of inspection, active sanitizing was observed; however, no sanitizer was detected in the sanitizing compartment. Upon further investigation, it was determined that the sanitizer bag was empty. The bag was replaced upon request, and the sanitizer concentration should now be verified before each use. DELI DEPARTMENT: 1. Replace the lids for all bulk food containers. At the time of inspection, sacks of sugar and flour were observed stored in their original bags and placed in appropriate containers; however, the lids, of these containers, were not being used. Please note that all bulk food containers must be equipped with tight-fitting lids to ensure they are rodent-proof and to protect food from contamination.

Clean and sanitize the interior of the 2-door refrigeration unit in the café, including the wire shelves, as accumulation of white and black organic residue was observed. Ensure that all interior surfaces are maintained in a clean and sanitary condition at all times.
