Why This Matters
Improper cooling is the #1 cause of restaurant foodborne illness. Clostridium perfringens spores germinate and multiply rapidly during slow cooling.
What Was Observed
Observed cooked beans measuring at 104F in walk in cooler. Per the PIC beans were cooked at 8:00am this morning stored at room temperature without a rapid cooling method and placed into the walk in cooler 30 minutes prior to inspector arrival. COS: PIC voluntarily condemned and discarded the beans.
