- All fridges are 41 degrees and below. - Hot-holding units at 135 F and above. - Hot water of at least 120 degrees available at all sinks. - No signs of vermin activity. - Dishwasher sanitizing properly. - There are still knives in the books, operator told inspector that they are not using those knives at all. Remove from premises.

1) Observed the stock bleach concentration not dispensing proper concentration to make the 100 ppm. COS- Operator used a different brand of bleach to make the proper 100 PPM. *Test often with your test strips to see if the stock bleach container contains adequate concentration.*
