Reinspection found items stored in handwashing sink, bean sprouts held at improper temperature, and mechanical dishwasher not dispensing sanitizer. Dishwasher repair was in progress and manual washing was set up as corrective action. Another reinspection is required.

Dirty cutting boards and utensils cause 76% of cross-contamination. Biofilms protect bacteria from cleaning. One contaminated surface spreads pathogens to dozens of foods.
Mechanical dishwasher not registering any chemical no chlorine nor quaternary ammonia solution during inspection. Operator is using the 3 compartment sinks to preparation food at time of inspection. Bleach was available for use and inform the owner to set up manual warewashing sink during inspection. The ecolab service repair man is on his way to repair the mechanical dishwasher.
