Mice produce 50 droppings daily containing Salmonella and hantavirus. Cockroaches carry 33 bacteria types and 6 parasitic worms. Rats spread plague and leptospirosis.
Observed one nymph cockroach near ware washing area. Licensed pest control is scheduled to come tonight. Please continue to work with pest control to ensure facility is free from vermin, clean and sanitize affected areas.

Temperature abuse causes 63% of foodborne outbreaks. Clostridium perfringens multiplies rapidly between 70-120°F. Listeria grows even at refrigeration temperatures.
Prep top at pizza line was holding at 44F, adjusted by chef to hold at or below 41F at time of inspection. Use analog or probe thermometer to monitor temperature not digital display on exterior. Corrected on site, please ensure all refrigeration is holding at or below 41F.

Ware washing machine in basement had no sanitizer during active ware washing. Service provider contacted immediately by PIC. Train staff on use of test strips, provide extra test strips.
