Temperature abuse causes 63% of foodborne outbreaks. Clostridium perfringens multiplies rapidly between 70-120°F. Listeria grows even at refrigeration temperatures.
What Was Observed
Items in prep top measured at slightly elevated temperatures, (egg 44F, milk 45F, ambient on dial thermometer 42F in back of prep top). PIC was requested to lower thermostat to ensure food is held at or below 41f.
