Why This Matters
Temperature abuse causes 63% of foodborne outbreaks. Clostridium perfringens multiplies rapidly between 70-120°F. Listeria grows even at refrigeration temperatures.
What Was Observed
Observed upright refrigerator have torn gaskets on both doors and ambient temperature was measured at 55 degrees Fahrenheit. Shredded cabbage, condiments/sauces, milk and creamer were inside the upright refrigerator. Per person in charge cabbage will be consumed by 2 pm. Creamer was measured at 61 degrees Fahrenheit. COS - staff voluntarily discarded creamer. Instructed to move the cabbage to walk-in cooler or ice bath.
