1. MAINTAIN sanitizing solution at the correct concentration (100 ppm chlorine bleach). -Observed sanitizing solution was 50 ppm chlorine bleach in food preparation in the front service area. Corrected on site - Per Inspector's request, the sanitizing solution was prepared to 100 ppm.

-Observed staff incorrectly state that 50 ppm chlorine bleach sanitizer is needed for sanitizing bucket. Corrected on site - Education provided.

Household equipment cannot withstand commercial use and harbors bacteria in cracks. Latex gloves cause severe allergic reactions in sensitive individuals.

1. IMMEDIATELY discontinue storing potentially hazardous foods in these units until holding at 41F or below and LABEL units to inform staff they are not holding at 41F or below. REPAIR or REPLACE units. -Observed the following refrigeration unit above 41F: 1. two door refrigeration unit next to the ice machine (no food observed stored in unit) at room temperature. 2. REMOVE or REPAIR equipment if in despair (make sure to get CDFA permit if repairing machine for dairy products). -Observed soft service machine in the office is not currently in use.
