Mice produce 50 droppings daily containing Salmonella and hantavirus. Cockroaches carry 33 bacteria types and 6 parasitic worms. Rats spread plague and leptospirosis.
Observed rodent droppings on floor in dry storage room under shelves, no damaged food observed. Cleaning and sanitizing initiated

HANDS CLEAN AND PROPERLY WASHED; PROPER GLOVE USE (CORRECTED ON SITE)
Sewage contains billions of pathogens including hepatitis A, norovirus, and E. coli. One tablespoon contains 100 million bacteria. Causes immediate severe illness.
A-Observed staff member retrieve item from ground and begin to change gloves, starting to don gloves without washing hands. B-Observed staff member set up sanitizer bucket without and return to prep without first changing gloves or washing hands. Corrected on site through inspector intervention, staff members washed hands properly, please ensure hand washing requirements are reviewed with staff. Fodo safety guide provided.

Dirty cutting boards and utensils cause 76% of cross-contamination. Biofilms protect bacteria from cleaning. One contaminated surface spreads pathogens to dozens of foods.
No sanitier bucket were set up on cook line at time of inspection, however sanitizer bucekt were properly set up based upon inspectors request.
