COMPLIANCE WITH SHELL STOCK TAGS, CONDITION, DISPLAY
Observed shell stock (oysters) in bag with tags in walk in stored on ice, not in perforated pan. Clams were stored correctly, store shell stock with tags, at or below 41F, in perforated pan or similar means to ensure no standing water. Ensure shell stock is never co-mingled. Use of pans, dividers, or similar means to keep batches seperated in oyster bar strongly advised. Contact Distirct inspector with any questions.

NO INSECTS, RODENTS, BIRDS OR NONSERVICE ANIMALS
Mice produce 50 droppings daily containing Salmonella and hantavirus. Cockroaches carry 33 bacteria types and 6 parasitic worms. Rats spread plague and leptospirosis.
Observed approximatly 4 live cockroaches on adhesive board under coffee machine in corner of downstairs service line (side closest to Taylor). Observed 1 or 2 dead cockroaches in cub are next to area under coffee machine. No other cockroaches observed. Please continue to work with licensed pest control to ensure facility is free from vermin, please contact district inspector for additional information regarding vermin control. Cleaning and sanitizing affected areas initiatied during inspection.

Without sanitizer, wiping cloths become bacteria breeding grounds. One contaminated cloth can spread pathogens to every surface it touches.
Observed white pvc pipe near stove in main kitchen which terminates below the rim of the floor sink, please adjust to provide a minimum 1 inch air gap.

Observed liquid waste on ground between grease trap and wall, please ensure grease trap does not leak, no standing water remains near grease trap in upstairs kitchen on north west side of ware washing area. Observed slight leak and standing water at hand wash sink in main dining room bar in upstairs. Please repair and maintain. If facility has standing waste water, area should be immediately cleaned and sanitized, then addressed by licensed plumber. In the event of wastewater backup, please self close.

Dirty surfaces harbor pests and serve as bacteria reservoirs. Accumulated grease and food debris attract cockroaches and rodents.
A-Shelves in ground floor walk in have accumulation of grime, please clean and maintain. B-Cabinets in coffee prep area have some bare wood exposed on front of cabinets, please clean and maintian. Repair to render surfaces smooth, durable, easily cleanable is porous wood is exposed.
