Why This Matters
Temperature abuse causes 63% of foodborne outbreaks. Clostridium perfringens multiplies rapidly between 70-120°F. Listeria grows even at refrigeration temperatures.
What Was Observed
The mechanical dishwasher in the kitchen was not sanitizing because the intake tube was not placed inside the sanitizer container. After reinstalling the tube and priming the machine, the dishwasher began sanitizing properly and tested at 50 ppm.
