What Was Observed
1. MAINTAIN 100 ppm chlorine bleach in sanitizing bucket at all times. -Observed 200 ppm chlorine bleach in sanitizing bucket at time of inspection. 2. CLEAN ice machine on a regular basis. -Observed a black residue towards the top of the interior white surface of the ice machine and dust accumulating at the opening/hinges.

Observed employees were unable to properly demonstrate food safety knowledge related to proper washing, rinsing, and sanitizing dishes (were not using the sanitization step) and did not know the correct amount of sanitizing solution necessary to sanitize dishes (10 ppm chlorine bleach stated when 100 ppm is necessary).
