What Was Observed
Cooked chicken in prep-top refrigeration unit against wall facing back-of-house measured 59F; aioli measured 62F. All potentially hazardous food (PHF) that was held in this unit for four hours or less was moved to a working unit. Continue storing all PHF in a separate refrigeration unit until this unit is adjusted, repaired, or replaced. See violation #35
