Why This Matters
Dirty cutting boards and utensils cause 76% of cross-contamination. Biofilms protect bacteria from cleaning. One contaminated surface spreads pathogens to dozens of foods.
What Was Observed
Observed no sanitizer solution (0ppm chlorine) when testing the mechanical dish machine after asking employee to run. No active warewashing at the time of the inspection. After retesting the machine again it still did not dispense any detectable chlorine. Discontinue use of the machine until it dispenses 50ppm chlorine. COS - Employee prepared at 100pm chlorine solution in the warewashing sink to manually sanitize. PIC contacted technician for repairs.

Observed missing door gaskets on the cooks line prep cooler on the far left of the cooks line. Need to repair/replace the door gaskets. 3.) Clean the bottom of the beverage cooler where debris buildup is present.
