Inspector found prep fridge holding milk at unsafe 45°F and breakfast sandwiches stored at room temperature for approximately 2 hours in display case. Facility also lacked proper sanitizer setup at time of inspection, which was corrected on site.

Temperature abuse causes 63% of foodborne outbreaks. Clostridium perfringens multiplies rapidly between 70-120°F. Listeria grows even at refrigeration temperatures.
What Was Observed
prep fridge with milk inside at 45F. service or lower to maintain internal temp to 41F. replace if unable to repair.

spam and cheese breakfast sandwich out at room temp. in display case. per mgr, brought over and left out for approx 2 hours. 2 options: a) apply for time as a public health control (TPHC) to leave out at room temp for up to 4 hours. prior approval with sfdph is required. will email form for that. or b) leave at 41F or below in cold holding display fridge by POS system.
