What Was Observed
1. MAINTAIN sanitizing solution in all areas where there is active food preparation. -Observed no sanitizing bucket was provided in the back to-go order area during active food preparation. Per employee, the bucket had been moved to the front service area. Corrected on site - Per Inspector's request, one bucket was relocated to the back to-go area. 2. When washing dishes, ALWAYS allow the quaternary ammonia sanitizing solution contact for at least 1 minute. -Observed an employee demonstrate how to properly wash dishes in the three compartment sink. Observed employee fail to let sanitizing solution contact for one minute instead employee dunked dish in sanitizer and removed it. Corrected on site - Education provided. 114117, 114125(b), 114141

-Observed wiping cloth (stored in a take-go bowl) not properly stored in sanitizing solution and container 0 ppm quaternary ammonia at time of inspection. Per employee, the wiping cloth was used prior to wipe their probe thermometer down earlier. Corrected on site - Education provided. Per Inspector's request, wiping cloth was returned to sanitizing bucket.
