Inspector's Report

During routine inspection, handwash sink was obstructed by lime container and corrected immediately. Ice machine showed mold-like buildup and dish machine measured zero chlorine sanitizer. Ventilation hood above rethermalizer had dust accumulation requiring cleaning.

Dirty cutting boards and utensils cause 76% of cross-contamination. Biofilms protect bacteria from cleaning. One contaminated surface spreads pathogens to dozens of foods.
Observed mechanical dish machine to measure 0 ppm chlorine. Dish machine was not currently in use. Utilize manual warewashing until dish machine is able to provide 50 ppm chlorine. Observed mold-like accumulation on top interior panel of ice machine. Clean and maintain all food contact surfaces clean.
