Why This Matters
Temperature abuse causes 63% of foodborne outbreaks. Clostridium perfringens multiplies rapidly between 70-120°F. Listeria grows even at refrigeration temperatures.
What Was Observed
Measured chicken at 50F and fish at 50F on the top portion of the food preparation cooler. These items had been there for approximately 2 1/2 hours. The chicken and fish were moved to the bottom of the cooler where temperatures were better. Measured fish at 44F inside the bottom portion of the cooler. This is off by one degree per thermometer accuracy, other foods below measured OK, and the cooler's temperature adjustment was not available inside the cooler. Will allow temporary storage, and wil
