Food Contact Surfaces: Clean and Sanitized
Dirty cutting boards and utensils cause 76% of cross-contamination. Biofilms protect bacteria from cleaning. One contaminated surface spreads pathogens to dozens of foods.
Observed no sanitizer buckets setup at the start of the inspection while food prep was occurring. PRIOR to starting food prep each day you must setup your sanitizing buckets with 100ppm chlorine and sanitize food prep surfaces at least every 4 hours or as often as needed. COS- PIC prepared sanitizer buckets with at least 100ppm chlorine for each food prep area.
