PROPER HOT AND COLD HOLDING TEMPERATURES (CORRECTED ON SITE)
Why This Matters
Temperature abuse causes 63% of foodborne outbreaks. Clostridium perfringens multiplies rapidly between 70-120°F. Listeria grows even at refrigeration temperatures.
What Was Observed
Measured an open yogurt drink at 45F inside the Cass 1-door upright cooler in the front counter area. The operator moved the yogurt to a working cooler. Measured three large baskets of chicken at 90F, 56F, and 54F held out at room temperature in the kitchen. The 54F and 56F chicken had been out of the cooler for about an hour; the 90F chicken was cooling from recent cooking. The operator moved all these items to a refrigerator. Measured beef at 45F, chicken at 45F, and hard boiled eggs at 45F inside the True 2-door upright cooler. These foods had been there for less than two hours per the operator. The operator turned down the cooler temperature to bring the foods into compliance. Measured chicken at 47F, milk at 50F, and cooked sprouts at 63F inside the downstairs walk-in cooler. These foods were discarded. Measured raw chicken at 47F, raw seasoned chicken at 47F, and shell eggs at 60F (IR reading) inside the cooler. The operator stated these foods were received two hours earlier, so these foods were moved to a working cooler or freezer.

This wooden structure is not smooth and cleanable and was found to harbor cockroaches. Remove the wooden structure, and find a different way to hold up the faucet and sprayer. Measured an ambient temperature of 56F inside the walk-in cooler. Foods inside the cooler measured 47F to 60F. Repair/adjust the cooler so that it holds foods at/below 41F. 114182
