During reinspection, multiple cold-held foods were found at unsafe temperatures including fresh mozzarella at 52°F, stracciatella cheese at 47°F, Caesar dressing at 48°F, and ricotta cheese at 48°F. All improperly held items were voluntarily discarded on site. The original violation from the previous inspection on 8/7/25 was not corrected.

Why This Matters
Temperature abuse causes 63% of foodborne outbreaks. Clostridium perfringens multiplies rapidly between 70-120°F. Listeria grows even at refrigeration temperatures.
What Was Observed
Measured stracciatella cheese at 47F, Caesar dressing at 48F, green ricotta cheese at 48F, and aioli sauce at 48F inside the undercounter cooler door at the far north end of the main island cooler. These foods were discarded. Measured pork at 52F and fresh mozzarella at 52F inside the pizza preparation cooler. These foods were discarded.
