Measured pooled crepe mix (with egg) at 52F and pooled eggs at 51F stored on ice in the kitchen. The operator immediatley moved these items to a 4-hour time mark and Time as a Public Health Control (TPHC) process to bring the foods into compliance. Measured salmon at 48F, feta cheese at 50F, ham at 49F, cut tomatoes at 55F, chicken at 54F, cantaloupe at 56F, whipped cream at 54F, and lemon curds at 68F on the top portion of the food preparation cooler.
