Inspector found multiple minor violations during routine inspection, all corrected immediately on-site. Issues included improper glove use and handwashing procedures, a coffee tumbler on a chopping board, sauce stored at unsafe temperature (73°F), and wiping cloths without sanitizer. Overall sanitation met standards with proper hand sink setup and sanitizer levels at 200 ppm.

Sewage contains billions of pathogens including hepatitis A, norovirus, and E. coli. One tablespoon contains 100 million bacteria. Causes immediate severe illness.
Observed employee went out of the kitchen with gloves on and went back to preparing food with the same gloves without washing hands and donning new gloves. COS - education provided. staff wash hands and don new gloves.

Temperature abuse causes 63% of foodborne outbreaks. Clostridium perfringens multiplies rapidly between 70-120°F. Listeria grows even at refrigeration temperatures.
Observed a container of sauce measured at 73 degrees Fahrenheit left at room temperature on metro shelving. COS - staff relocated sauce to walk-in cooler.
