Temperature abuse causes 63% of foodborne outbreaks. Clostridium perfringens multiplies rapidly between 70-120°F. Listeria grows even at refrigeration temperatures.
What Was Observed
1. Observed potentially hazardous foods (pepperoni, shredded mozzarella, pancetta, mushrooms) in the AVANTCO countertop pizza prep cooler holding between 45°F-50°F, despite the unit's digital thermometer displaying 37°F. In addition, the evaporator coils of the unit were heavily coated with flour.
