Improper cooling is the #1 cause of restaurant foodborne illness. Clostridium perfringens spores germinate and multiply rapidly during slow cooling.
What Was Observed
Improper cooling methods and equipment: Utilize metal containers when using ice bath to rapidly cool PHF. Observed two containers of cooked chicken at 45-47 degrees Fahrenheit cooled from the prior day. COS - meat was discarded.
