Temperature abuse causes 63% of foodborne outbreaks. Clostridium perfringens multiplies rapidly between 70-120°F. Listeria grows even at refrigeration temperatures.
Measured chicken at 125F, 129F, and 130F inside the Traulsen over/under 2-door warmer on the service line. Measured rice at 119F and 120F inside the same warmer. These foods had been in the warmer for approximately 2 hours. The chicken was reheated to 165F; the rice was discarded.
