Observed a leak from the left compartment drain pipe at the pot sink in the cafeteria kitchen (the sink next to the steam cookers and cooks' line). Repair the leak.

Why This Matters
Temperature abuse causes 63% of foodborne outbreaks. Clostridium perfringens multiplies rapidly between 70-120°F. Listeria grows even at refrigeration temperatures.
What Was Observed
Measured chicken at 125F, 129F, and 130F inside the Traulsen over/under 2-door warmer on the service line. Measured rice at 119F and 120F inside the same warmer. These foods had been in the warmer for approximately 2 hours. The chicken was reheated to 165F; the rice was discarded.
