What Was Observed
Observed meat in one door upright refrigerator at cooks line to measure 57F. Measured ambient temperature of unit to be 61F. Per PIC, meat was placed in the unit less than 4 hours prior to inspection. COS: all meat was relocated to the walk in cooler to rapidly cool to 41F or below. Do not use cooler until it is able to maintain PHF at 41F or below.
