Observed a dead baby mouse on a glue board on the floor located in the back storage room. Observed flies in the prep-area as well. Keep screen door closed.

Why This Matters
Dirty cutting boards and utensils cause 76% of cross-contamination. Biofilms protect bacteria from cleaning. One contaminated surface spreads pathogens to dozens of foods.
What Was Observed
Dish machine failed to dispense sanitizer even after priming. Reservoir was half full. Sanitze manually in the 3-cp sink until it is repaired. Sanitizer buckets were prepared the previous day and were soiled and had chlorine levels well below 100 ppm. Demonstrated how to make a bulk solution to dispense into the smaller buckets.
