What Was Observed
1) Observed hand-wash buckets on the floor in the dim sum making area where the cook-line is. Employee use the hand-wash buckets to temporarily remove gluten stuck on their hands after each preparation step. COS- Operator told employee to elevate the hand-wash buckets above the floor. *Unless it is a sanitizer bucket, no equipment or food-handling procedure should be on the floor.
