Routine inspection revealed multiple violations requiring follow-up within one week. Dishwasher lacked adequate sanitizer, food was stored directly on floor in walk-in cooler, and food containers were found stored outside. Cutting boards showed excessive debris buildup requiring replacement.

What Was Observed
Mechanical dishmachine did not have adequate sanitizer solution at time of inspection. Operator was instructed to manually sanitize all multi use utensils while dishmachine is in disrepair. Ensure that mechanical dishwasher has concentration of sanitizer solution checked daily prior to any utensil washing. Note: Interior of refrigeration units had slight buildup of food debris around the base and the gaskets. Remove and maintain in sanitary condition.
