Clutter provides harborage for rodents and cockroaches. Cardboard harbors cockroach eggs. Each egg case contains 30-40 nymphs.
Observed employee personal food stored on shelf above uncovered seasonings intended for customers. Discontinue this practice. Ensure to store all employee personal items away from food/food contact surfaces intended for customers so as to prevent contamination.

Temperature abuse causes 63% of foodborne outbreaks. Clostridium perfringens multiplies rapidly between 70-120°F. Listeria grows even at refrigeration temperatures.
Observed pork belly at flip top portion of prep cooler at cooks line to measure 60F at time of inspection. Per PIC, it was placed in cooler approximately 2 hours prior to inspection. Measured ambient temperature of cooler to be 50F. Repair cooler so that it is able to maintain PHF at 41F or below. COS: all PHF in cooler was placed on TPHC (time as a public health control) until cooler is repaired
