Temperature abuse causes 63% of foodborne outbreaks. Clostridium perfringens multiplies rapidly between 70-120°F. Listeria grows even at refrigeration temperatures.
What Was Observed
Large container of red salsa stored inside walk-in refrigerator at a cold holding temperature of 48 degrees Fahrenheit. Per cook, red salsa was cooked and cooled in an ice bath using shallow containers, then placed in walk-in refrigerator once the salsa reached below 43 degrees Fahrenheit within that hour. Cook stated that on this date, the salsa was removed from the refrigeration unit for use and stored at ambient temperature for more than two hours. Staff was unable to provide temperature logs
