Temperature abuse causes 63% of foodborne outbreaks. Clostridium perfringens multiplies rapidly between 70-120°F. Listeria grows even at refrigeration temperatures.
Observed the following foods at unsafe temperatures in the 2 door reach in cooler: pico de gallo at 48F, cooked meat at 46F, in unit since yesterday. Ambient temperature of the unit measured at ~42F. COS - operator voluntarily discarded food items over 41F and turned the unit colder (~37-38F).
