Inspector's Report

Inspector found rodent droppings in multiple areas including under service counters, behind cooking equipment, and near the dishwashing machine. Potentially hazardous foods were improperly stored at temperatures between 45-48°F instead of the required 41°F or below. Additional cleanliness issues included dust buildup underneath cook-line and on dishwasher surfaces.

Mice produce 50 droppings daily containing Salmonella and hantavirus. Cockroaches carry 33 bacteria types and 6 parasitic worms. Rats spread plague and leptospirosis.
Observed rodent droppings on the floor in the following areas: Underneath the service counters of the left cash register area, Underneath and behind the cooking equipment next to the oven and pressure cooker, In the space between the grill and the wall where the cook-line is, In the corner underneath the high temperature dish-washing machine.

Temperature abuse causes 63% of foodborne outbreaks. Clostridium perfringens multiplies rapidly between 70-120°F. Listeria grows even at refrigeration temperatures.
Observed PHFs in metal bins on ice with temperatures ranging form 45-48 F. COS- Employees relocated some of the metal bins in a tray of ice to have more contact to keep the temperature at 41 F and below.
