Inspector's Report

Routine inspection revealed expired food safety manager certification and improper hot holding of delivered soup at 125°F without temperature logs. Sanitizer solution was missing at start of inspection but corrected on site.

Improper Hot Holding Temperature
Temperature abuse causes 63% of foodborne outbreaks. Clostridium perfringens multiplies rapidly between 70-120°F. Listeria grows even at refrigeration temperatures.
Measured a container of soup at 125 degrees Fahrenheit, per staff soup was just delivered about 30 minutes ago and will be reheated to 165 degrees Fahrenheit. Temperature logs for the food items reheated not available at the facility for review. Ensure to log the date, time, temperature and food names of potentially hazardous delivered via commissary and the temperature logs for foods being reheated. Keep the logs at the facility for review of the inspector.
