Inspector's Report
Inspector found extensive rodent activity with droppings in multiple areas including front storage rooms, POS system area, pastry display case, dishwashing area, back wall cabinets, and throughout second floor. Facility also lacked valid food safety manager certificate at time of inspection. Multiple structural holes need sealing with steel wool and proper materials to prevent rodent entry.

Rodent Droppings Found Throughout Facility
Why This Matters
Mice produce 50 droppings daily containing Salmonella and hantavirus. Cockroaches carry 33 bacteria types and 6 parasitic worms. Rats spread plague and leptospirosis.
What Was Observed
droppings observed in the following areas: 1) front storage rooms (electrical and dry storage by bev fridge. (holes need to be sealed here asap with steel wool. 2) on bottom shelf POS system, pastry display case 3) on floor next to and behind utensils washing sink and hi temp dishwasher 4) in cabinets against back wall. 5) on 2nd floor throughout but especially under and behind shelving and by items above staircase. a licensed pest control company needs to regularly service this facility to help eliminate rodent activity noted in facility today. once a month service is the typical service they offer food facilities.

Why This Matters
Clutter provides harborage for rodents and cockroaches. Cardboard harbors cockroach eggs. Each egg case contains 30-40 nymphs.
What Was Observed
seal holes that are larger than the size of #2 pencil with steel wool, metal flashing or 1/4 in steel wire mesh. holes in the following areas: 1) front storage room where 2 sticky traps are 2) walls under electric/gas meters 3) hole on customer side of counter, under menu on wall. ensure all doors leading to exterior have no gap underneath. install door sweep if so that goes entire width of doorway.
