Temperature abuse causes 63% of foodborne outbreaks. Clostridium perfringens multiplies rapidly between 70-120°F. Listeria grows even at refrigeration temperatures.
Observed bean sprouts at 50F in water, chicken at 47F in shallow plastic pan in cookline, rice in microwave at 130F, pork in food prep sink for staff meal at 52F. PHF moved to refrigerator, rice cooked more. Holding temperature requirements, reheating and microwave requirements reviewed. Please ensure deep metal pans are used for ingrediants at main cook line to keep the PHF sufficiently cold (at or below 41F). Main refrigerator is 40F for internal temperature, other items (scallops 41F) in deep

In the space between main kitchen back door and rear building with chest freezer and deli slicer (rear prep room with hand wash sink) NO OPEN FOOD IS PERMITTED. Food must be covered inside kitchen before transport to walk in. Place pork into buckets in room with ceiling, not space between kitchen and prep room.
