Mice produce 50 droppings daily containing Salmonella and hantavirus. Cockroaches carry 33 bacteria types and 6 parasitic worms. Rats spread plague and leptospirosis.
Observed a rodent droppings at the facility at following locations - Rodent droppings under the POS in the bottom shelve without affecting the food. - One dead mouse on a monitoring trap - Rodent droppings adjacent to wall in back storage area. - Rodent droppings at the abondon prep cooler outside of kitchen area. REMOVE the droppings. Seal all the entry points and holes and use exclusion methods to stop entry points. CLEAN and santize the affected area with low concentrated cholorine. Provide pest control and send service report at inspector email at usman.javaid@sfdph.org.

PROPER HOT AND COLD HOLDING TEMPERATURES (CORRECTED ON SITE)
Temperature abuse causes 63% of foodborne outbreaks. Clostridium perfringens multiplies rapidly between 70-120°F. Listeria grows even at refrigeration temperatures.
Observed three cooked chicken pans temping 45-48F cooked ground meat at 68F in prep cooler ( ambient ~46F) in front of cookline. - COS Operator was asked to voluntarily condemened the food items as they were made since 9amn other items were relocated to another working unit. Call service technician and DO NOT USE prep cooler until repaired. - Operator resetted the unit temperature and it was corrected at the end to 38F.

Observed chicken being cooked at lower temperature to 155F by using sous vide method without any approved Variance. If operator want to cook chicken at lower temperature then operator need to get approval from CDPH ( California department of public health).
