Mice produce 50 droppings daily containing Salmonella and hantavirus. Cockroaches carry 33 bacteria types and 6 parasitic worms. Rats spread plague and leptospirosis.
Eliminate rodent activity from the facility. Observed a few rodent droppings on the corners of the upstairs wine storage room. Remove droppings and sanitize affected areas.

Protect food from overhead contamination. Obseved mushroom beneath the condensing line at the walk-in cooler without a cover.

Observed the handwash sink at the bar/kitchen entrance to be obstructed by a broom and dust pan. COS - broom and dust pan removed.
