Mice produce 50 droppings daily containing Salmonella and hantavirus. Cockroaches carry 33 bacteria types and 6 parasitic worms. Rats spread plague and leptospirosis.
Observed 1 live cockroach crawling on a food debris on the floor adjacent to ice machine. COS - staff remove the food debris and cockroach followed by cleaning and sanitizing the affected areas. Temperature abuse causes 63% of foodborne outbreaks. Clostridium perfringens multiplies rapidly between 70-120°F. Listeria grows even at refrigeration temperatures.
Observed cut tomatoes, olives and cut lettuce measured between 47 to 50 F stored on the wells covered with Saran Wrap of the prep cooler, ambient temperature of the prep cooler was measured at 41 F. Per operator the food on food wells was placed less than 2 hours ago. COS - food on the food wells was transferred on the bottom space of the prep cooler. Provide thermometer on all cooling units and monitor the temperature of all cooling units daily.

Clean and sanitize the observed some food debris in the hard to reach areas of the equipment and behind the equipments. Clean and sanitize the observed organic growth on the conjuncture of the wall and panel of the ware wash sink. Clean the observe grease accumulation on the switch and electric plug outlet in the kitchen.
