chicken and beef on stove top at 115-130F. per staff just turned off but must be kept hot at 135 or above during service at all times. 2 drawer fridge under cooks line at 45-48F with raw chicken skewers and raw proteins inside. adjust or service. keep additional thermometers inside all fridge units to monitor at all times. fried vegetables under heat lamp at 75F. heat lamp not on at time of inspection. these must also be at 135F or above at all times.
