HOT AND COLD RUNNING WATER AVAILABLE
Why This Matters
Without hot water, dishes cannot be sanitized and hands cannot be properly washed. Allows survival of viruses and bacteria that cause foodborne illness.
What Was Observed
Observed inoperable hot and cold handles at the handwash sink at the north end of the meat department. Repair the sink to that it provides hot and cold water under pressure. Observed an inoperable cold handle at the three-compartment sink downstairs. Repair the handle so that the sink provides cold running water under pressure. Observed a leak at the main valve just above the left sideboard of the three-compartment sink downstairs. It leaks when water is run in the sink. Repair the leak.

PROPER HOT AND COLD HOLDING TEMPERATURES
Why This Matters
Temperature abuse causes 63% of foodborne outbreaks. Clostridium perfringens multiplies rapidly between 70-120°F. Listeria grows even at refrigeration temperatures.
What Was Observed
Measured sticky rice rolls at 96F and sweet rice rolls at 85F held out at room temperature on the cashier's counter. These foods were eventually removed from sale due to not being from an approved source. Measured quail eggs at 60F (IR temp), Vietnamese rice noodles at 51F, and various types of egg noodles at 51F in the left half of the open-faced, vegetable display cooler. The operator stated these foods had been there for approximatley 2 hours. These foods were moved to the vegetable walk-in cooler downstairs.

FOOD STORAGE; FOOD STORAGE CONTAINERS IDENTIFIED
Why This Matters
Improper storage allows pest access and temperature abuse. Food on floor contacts contaminated water during cleaning. Expired foods cause illness.
What Was Observed
Observed foods stored on the floor of the meat walk-in refrigerator downstairs. Observed foods stored on the floor of the walk-in freezer downstairs. Obsderved boxes of onions on the floor downstairs beneath the padded I-beam. Store all foods at least 6" above the floor. Observed several foods stored beneath unshielded sewer lines downstairs. Either shield the sewer lines, or cease storing food items beneath the sewer lines.
